Corba with potatoes and minced meat

My favorite corbica, fine and light, perfect for colder days.

Preparation steps

  • Dip the sun-dried tomato in water and leave it for 30 minutes, then drain it and chop it finely. Saute the finely chopped red and garlic in butter, then add the meat and fry for about 10 minutes. Add the diced potatoes and simmer for another 10 minutes. on low heat, stirring often, then pour the stock and let it boil. When it boils, add mashed and dried tomatoes, dried vegetables, peas, red peppers, pepper, oregano and basil. Cook on low heat for 40-50 minutes, add a little water if necessary. .Add to taste. Serve as desired sprinkled with finely chopped hot pepper.
