Colorful wafers

I haven’t made this cake in a long time so it’s now included in Christmas cakes. I got the recipe from a colleague from work fifteen years ago and now I share it.

Preparation steps

  • YELLOW CREAM Beat egg yolks, sugar and vanilla sugar for 10-15 minutes. Cool and mix with well-made butter. Divide the cream into two parts. WHITE CREAM Beat the egg whites and sugar with a mixer into the snow, add the lemon juice and bring to a boil. Mix with a whisk, not a mixer, until well thickened. Remove from the steam and continue to stir to cool. Divide the cream into two parts. ARRANGEMENT Place one wafer on a tray, spread white cream, cover with another wafer, spread yellow cream and place biscuits soaked in coffee on it (6 biscuits in four rows - that's 24 biscuits). Put the rest of the yellow cream on the biscuits, cover with the third wafer. Coat it with white cream and put a fourth wafer. Cover with paper and place some heavier object to blend the creams well with the wafers. It can be glazed with chocolate, I didn’t. If you are glazing them, then turn the back wafer so that the larger holes are down.

Serving

Cut with a sharp knife as cubes or as desired.
