Cold wind

Here is my version of the "Ice Wind" cake. There are certainly a lot of them, this is how I make it.

Preparation steps

  • Whisk the egg whites into the solid snow, gradually add the sugar and whisk everything well. Finally, mix in the vinegar or cream of tartar.
  • Preheat the oven to 150c. Line a large black baking tray (baking sheet) with baking paper and spread the mass evenly.
  • Dry for 1 h.
  • Bake at 150C. about 1h.to get the bark a golden color.
  • Cut the cooled crust into 3 equal parts. Gently separate the crusts if the seeds have stuck and set aside while you prepare the filling.
  • Put the milk (4 dl.) On the stove to boil. Separately whisk the other ingredients, egg yolks, sugar, flour, vanilla, and pudding powder, so that there are no lumps, and when the milk boils, pour the mass lightly and mix with quick movements using a whisk. When it thickens, remove it, transfer the mass to a plastic container and cool.
  • In the cold, add finely diced margarine and whisk everything well.
  • Whip the sweet sour cream well into a firm icing. I used whipped cream mixed with cold milk.
  • Finely chop the strawberries (You can add more or less, as you prefer, to taste).
  • Sort: Peel-cream-chopped strawberries-slag, peel-cream-chopped strawberries-slag, peel-cream-slag.
