Coconut Quindim Cookies

Coconut the Brazilian way in my version ...

Preparation steps

  • In another bowl, place the finished coconut, sugar, melted butter, vanilla sugar and egg yolk.
  • Start mixing lightly with a spatula. Mixing will take some time, even about 5 minutes. The ingredients must be absorbed, and some liquid will appear at the bottom of the bowl. Then the mixture is ready to be filled into molds.
  • Fill the molds as desired but not to the very top. When you fill them - lightly tap them on the table 2-3 times so that the mixture is evenly distributed. Fold the molds into a deeper tin and pour water up to half the height of the mold (BAGNA MARIA). Place the oven at 180 ° for about 30-40 min.
  • Make sure the top gets a jagged brown color. Then they are done. Take them out of the mold upside down, so turn them upside down. Cool. Sprinkle them with powdered sugar, coconut, decorate with icing or chocolate ...
