Coconut kuglof
This is one of those old recipes where all you need to measure is a coffee cup. Simple, cheap, classic, and delicious. In these cold days, it goes well with cocoa, tea or coffee.
Preparation steps
- Whisk eggs with sugar, add melted butter and milk.
- Mix the flour, coconut and baking powder separately and add to the mixture. Whisk everything once again briefly and add grated lemon or orange zest if desired.
- Preheat oven to 180 degrees. Coat the mold with butter and flour, pour the mixture and bake for about 40 minutes.
- While the cake is baking, prepare the glaze. Heat the sour cream, then when it boils add the chocolate, stir until melted.
- Leave the finished cake in the mold until it cools down a bit, then take it out and pour the glaze over it.
Serving
In the original recipe there are double measures and then the cake is baked in a pan, since it was too much for me, I halved the ingredients and made a kuglof, although now I regret how fast it disappeared :)
