Preparation steps
- Cut the butter into flour and mix it with your hands to get a crumb. Add egg, cream, milk and finally coconut. Knead a smooth dough, shape into a pancake, wrap in cling film and place in the fridge for a couple of hours. Roll out the dough to a thickness of 3 mm (I roll it between two foils so that no more flour needs to be added) and cut into the desired shapes. Place on a baking sheet lined with baking paper and bake for about 7 to 10 minutes at 180 ° C (depending on the oven, they are ready when they lightly turn yellow). Allow the biscuits to cool and combine with the jam. I combined them with homemade elderberry jam that I had previously heated to melt. You can combine them with any other jam to which you can add a tablespoon of rum if desired and stir gently on the fire to melt (or some other filling).
