Preparation steps

  • For 3D cakes, it is best to use firmer biscuits, and for the outside, ganache cream. It is extremely important that the cake is very well smoothed before you coat it with fondant. Ganache cream is also very appreciative of cake design. The stacked cake should be cooled well before you start to cut out the shape (if needed, for the pokemon I just used a ball + round mold). For a shark, make gummy teeth the day before. For the cake, I used a round mold plus a conical mold to be close to the shape, and then I cut the well-chilled cake into a shark shape. Carefully coat the cut cake with ganache cream and carefully flatten. I use a combination of straightening with a hot knife and applying ganache at room temperature. When the cake is a little firm in the fridge, you can spread butter on your hands and flatten them with your hands if necessary in parts where it is difficult to flatten with a spatula (eg inside the shark's mouth). Allow to set well. For simple 3D shapes, roll out the fondant and carefully coat. Start leveling the fondant with your hands smeared with vegetable shortening or butter, following the shape little by little until you reach the bottom. If the shape is more complicated, cover the cake in portions. For a shark, first cover everything with a knife, carefully cut out the part where the mouth is and press the edges. Coat the inside of the mouth separately and carefully align the edges. If the joints are visible, use Royal icing to mask the joint. Apply a little royal icing, then dip the brush in water and run over the joint until you manage to hide it. Allow the royal icing to dry, then color the cake. First paint the inside of the mouth, then brush the teeth (use royal icing if necessary to secure the teeth, two rows of teeth go in the lower jaw. Leave to tighten. Then cover the front part of the shark that should remain white with transparent foil. coat with leaf glaze.Add the eyes and transfer the shark to a base coated with blue fondant, add the fondant waves and royal icing foam.
