Classic Russian cake - Kurnik

Kurnik is the most famous traditional Russian cake, it used to be like a wedding tsar - a cake. It must be tall, have 3 or better fillings. It may look like a small church, so they made it for Christmas. Yesterday I made this one, my husband was very happy :))))

Preparation steps

  • ) Chop the onion and fry in oil until it starts to give juice. Then pour the mushrooms and mix for 10 minutes. Finally add the sour cream.
  • ) We cook rice and a little salt water, when it is cooked we cut eggs, parsley, celery. Combine everything, mix with mayonnaise.
  • We prepare pancakes from the stuffed ingredients (I got 5).
  • We prepare the dough. Let's combine all the ingredients. Divide the dough into 3 parts. We stretch 2 parts into circles that will be the upper and lower part of the chicken coop) and 1 into a long crust (this will be the wall).
  • Take a deep baking tray (form) for a loaf of bread or a celebration cake, coat with butter. Then put the dough in the pan: first the wall, then the bottom.
  • We put our fillings and pancakes. chicken filling - pancake - rice filling - pancake - mushroom filling - pancake - rice filling - pancake, etc.
  • Cover with another crust - circles. We press the ends with our fingers.
  • From the rest of the dough, make some small figurines (hearts, flowers, stars) and put them on top.
  • We cut the surface with a cross.
  • Coat surface 1 with egg yolk.
  • Place in the oven and bake at 200 degrees for 35 minutes.
