Clafoutis with grapes
Clafoutis (klafuti) is one of my favorite French desserts.
Preparation steps
- Grease a deeper ceramic bowl (20x30) or two smaller ones (15x15) well with butter on all sides and set aside. It is important that it is deeper, that the cream does not spill on the side when baking. Turn on the oven to 200 ° C to warm up. Wash the grapes, clean the seeds if possible (not necessary).
- Melt 50 g of butter over low heat and leave to cool slightly. Whisk the eggs with 100 g of sugar and vanilla sugar. Add almonds, milk, liquid cream (crème fraiche), melted butter and thickener. Stir briefly, about 2 minutes. The mixture is quite liquid, maybe even thinner than when we stir the pancakes, but it bakes well.
- Arrange half of the grapes on the bottom of the ceramic bowl, pour the beaten egg mixture over the grapes, and spread the remaining half of the grapes over the mixture.
- Bake at 200 ° C for about 20 minutes, then reduce the temperature to 180 ° C, sprinkle the cake with the remaining sugar (30gr), return to the oven and bake for another 15 to 20 minutes. It is best to bake in two smaller pans, because then the cream bakes better. If you are baking in one larger pan, then check the dough with a toothpick. The cream must not remain liquid. update: 29/03/2012 Today I prepared it with strawberries. I replaced the grapes with strawberries (400gr) which I chopped into smaller pieces, then I added one teaspoon of strawberry flavor to the mixture. I prepared everything else in the same way. The taste is PHENOMENAL. If you haven’t tried it yet, I really recommend it. I adore him :)
