Chokeberry syrup
No cooking. In almost all the recipes I found on the internet, chokeberry is cooked. I think it is a shame to cook these healthy berries, a lot of vitamins are lost. I tried it a bit (according to one recipe without cooking) and it turned out really fine.
Preparation steps
- Clean the chokeberry berries from the stalks and wash well. I put them in a strainer and wash under running water.
- Boil water and cool. Chop chokeberry berries in a blender. Pour in water, add citric acid, stir and leave for 24 hours. On the second day, strain the juice over a double gauze. Add 1 kg of sugar to 1 liter of liquid and stir until the sugar dissolves. Pour the juice into 1/2 l bottles and store in the freezer. I take it out as needed, add 1/2 kg of sugar and store in the fridge. I do this because I don’t use a preservative.
- Do not throw away the rest of the chokeberry after squeezing. Last year, I added about 3 kg of ground blue plums to a mass of about 1 kg of ground, drained chokeberry, and with the help of Želino, I cooked a couple of bottles of very tasty jam.
