Preparation steps

  • Turn the oven to 200 C degrees. Cut the chicken into bite-sized pieces.
  • In a small bowl, mix the bread crumbs, salt, pepper, garlic, basil and parmesan. In another bowl, melt the butter. Roll the pieces of chicken first in butter, then in a mixture of bread crumbs (you can have several pieces at once) and place in a tin on greaseproof paper. Bake for about 20 minutes!

Serving

I usually serve this with cauliflower puree - the medallions are spicy and crunchy, and the cauliflower puree is mild, so I agree :)
