Charlotte Russe

Preparation steps

  • Make a cream:
  • Heat 1/3 of the milk, slice the vanilla stick and scrape the seeds into the milk. Allow to cool, along with the vanilla. Take out a stick of vanilla and add the rest of the milk. Reheat to boiling. Pour 100 ml of this milk over the egg yolks, sugar and starch and mix well, so that there are no lumps. Return everything to the milk, bring to a boil and cook, stirring, for a few minutes, until the cream thickens. Remove from the heat and stir until slightly cooled. Then add the diced butter and stir until melted. Allow to cool.
  • Soak the gelatin sheets in cold water until soft, then melt it in two tablespoons of heated liqueur. Make sure it never boils, as it will lose its gelling power. Add a little cream and the rest of the liqueur to the melted gelatin and cool a bit before mixing in the rest of the cream and the soft whipped sweet cream. Stir gently.
  • To serve, place a few biscuits on the bottom of the mold or tin ring, place a thicker layer of cream on it, cover with a layer of biscuits. Repeat with the rest of the biscuits and cream. Refrigerate for a few hours to allow the cream to thicken. For serving, finish with plenty of whipped sweet cream and a few raspberries, strawberries or cherries on top…
