Champurrado ...
Champurrado is a famous Mexican hot chocolate that is made with their mass of harina fable ... since we can't buy that flour (I have it) so I made it with our yellow corn flour as a substitute ... and the result is great .. .is not the same but it's almost the same..and a little more work but for chocolate I do everything ... and that I forgot to add it goes and sour cream inside ...
Preparation steps
- In a slightly larger skillet, add milk, brown sugar, chocolate drops or crushed kitchen chocolate and cinnamon stick (or half a teaspoon of ground cinnamon) ... Put everything to cook, stirring occasionally, until the chocolate has melted ... about 10 minutes. ..
- If you can find as finely ground yellow corn flour as possible, it would be ideal for this recipe ... Put corn flour and water in a small bowl..mix well ..
- When all the chocolate has melted, add the corn flour to the milk and mix ... cook everything together on low heat for about 20 minutes..Remove from the heat and then add sour cream and mix well ...
- Since you don't have a mass of harina and it all melts in the milk, here you have to strain the cooked chocolate from the flour that was cooked but the grains remained ... so take one big bowl and squeeze the chocolate milk through a small sieve ... this is what it looks like. ..Excellent both hot and cold ...
