Preparation steps

  • Cook the cauliflower in boiling water for about 5 minutes, no longer. Dry it and finely chop it and add finely chopped parsley, or chives, basil, if desired. Grate the cheese, beat the eggs briefly with a fork and add to the mixture, then bread crumbs and mix everything well to absorb the ingredients. By hand, or with a spoon, form smaller meatballs as in the picture and bake in a preheated oven at some 180 degrees until slightly browned, so not too long :) Serve with ajvar, yogurt and pay attention to how much salt is added because the cheese itself quite salty.
