Carrot Cake Swiss Rüebli Kuchen
Since I have been living in Switzerland for 4 years and I am a big gourmand and during that time I tried many different dishes, both salty and sweet, which delighted me with their taste. a positive impression is a traditional Swiss carrot cake or as the Swiss call it Rüebli Kuchen! Preparation steps
- Add the egg yolks, sugar, salt, water and grated lemon zest to the bowl and mix everything well until the mixture is light in color. Then add the grated carrot and mix well.
- Mix ground hazelnuts, flour and baking powder and add and combine with the mixture. Then beat the egg whites in solid snow and lightly add to the mixture several times, stirring after each addition.
- Place the baking paper in a 24 cm mold and bake in a preheated oven at 180 degrees for 45-55 minutes. When it is baked, take it out of the oven and leave it to cool, then take it out of the mold.
- We will get the glaze by mixing powdered sugar, lemon juice and water well. If necessary, add a little more water to make our glaze smooth and not too firm. Pour over the cake and arrange finely and then decorate it as desired. Enjoy! :)
