Carbonara with zucchini, carrots and peppers

A small variation on the recipe given to us by anka-1955!

Preparation steps

  • Cut smoked bacon into strips, fry in olive oil. Chop the peppers into strips, the carrots into slices, fry. Add the crushed clove of garlic, just to let it smell a little. Cut the zucchini in half lengthwise and cut into slices, add to the pan, simmer. Stir in a tablespoon of Vegeta, pepper, add rosemary.
  • Meanwhile, add spaghetti to boiling salted water, cook until al dente, strain.
  • Eggs, cream and pomezan mixed, add to hot spaghetti. Leave covered for 5 minutes. Stir in the vegetable sauce. Stir in chopped parsley.

Serving

I have to take the bacon out of the sauce because my daughter doesn’t eat it, so it stays more for those who adore it!
