Canihua Salad
Canihua or kañiwa is referred to as "superfoods" because it is extremely rich in fiber, protein, flavonoids, such as quercetin (helps maintain the cardiovascular system, blocks blood clots, slows tumor growth, reduces inflammation, helps regulate blood pressure, as well as treatment of allergies because it is believed to be an excellent antihistamine). Canihua is gluten free. They call it the cousin of the much more popular quinoa, of which it is smaller, so it is also known as "baby quinoa".
Preparation steps
- Pour canihua seeds into the sherpa, pour over water, add salt and cook for about 20 minutes. Allow to cool.
- Grate cabbage and carrots. Add sliced leeks and red pepper.
- Add sliced tomatoes, boiled canihua seeds, and season (salt, pepper, olive oil and lemon juice)! Stir everything well!
- Serve now!
