Cake "Tomica" (fine chocolate cake)

this was my first birthday cake ... it was named after my mother's colleague who celebrated his (I don't know which) birthday with the team from work some 30 years ago ... having tasted his birthday cake, a good part (mostly women's) teams, he asked for a recipe ... as the cake did not have a name, they named it (and today they call it), according to the celebrant - "Tomica" cake

Preparation steps

  • BISCUITS: - mix 4 egg yolks with 15 dag of sugar - slowly add 10 tablespoons of water - mix 1 packet of baking powder + 10 dag of walnuts (instead of walnuts you can use coconut, hazelnuts, almonds, carob…) - cocoa can be added if desired - mix 20 dag of sharp flour - add solid snow of 4 egg whites - bake at 200 - 220 ° C for about ½ h - cool, cut crosswise, soak in milk + rum and fill with cream
  • CREAM: - Boil 7.5 dl of milk (on low heat) with 5 tops full of sharp flour and 15 dag of sugar (I add flour to cold milk and mix a little) - Stir constantly so that no lumps form - when it thickens, remove from fire and add 20 dag of koh (or milk) chocolate and a little rum (I put about ½ dl) - stir until the chocolate melts - mix 1 butter (25 dag) or margo for the cream into the cold cream - decorate with chocolate powder / ground hazelnuts / walnuts / almonds / melted chocolate / pralines / chocolate whipped sweet cream… as desired ...
