Bun from Stara Planina

A traditional recipe from Stara Planina, found in a newspaper from 1922.

Preparation steps

  • Put the yeast in lukewarm water with sugar. Put sifted flour and all other ingredients in a bowl. Finally add the yeast. The yeast just needs to start, not completely sour. Knead the dough well. It will stick to your hands, because it is soft, so you oil your hands a little when you knead. Cover with a cloth and leave to rise, to double, about 30 minutes. Mix the dough, then spread it on a floured surface and divide it into 10 noodles. Spread each noodle to about the size of a dessert plate and arrange in a tray. Whisk the eggs with a fork, then add the sour milk. Combine well and place over the buns, but not all the way to the edges. Place the grated cheese on top. Leave it to rise for another 15 minutes. Bake at 220 degrees for about 20 minutes. Let me mention that the recipe is similar to the Bulgarian Prlenka, except that sheep's cheese and sheep's sour milk go there. Pleasant !!
