Bulgur fritters
Bulgur is a food that I discovered only recently and enthusiastically included on my menu. It is a cereal obtained from several types of wheat and is in the form of small, brown granules that you can use in many ways.
Preparation steps
- Bring the salted water to a boil and when it is done pour it over the bulgur. Let stand for about twenty minutes, then drain the excess water through a strainer.
- Separately grate the zucchini and carrots, add salt, and after standing for about ten minutes, mix with the bulgur. Add finely chopped onion, garlic, flour, bread crumbs, salt, pepper, turmeric and parsley to the mixture, and add yogurt if necessary, if the mixture is not moist enough. Let it all come together in a compact mixture. Shape the fritters, roll generously in flour on each side, and fry in hot oil until light brown.
Serving
Place the fried fritters on a plate lined with a napkin that will absorb the excess oil.
