Breaded perch fillet on millet with chard
Millet is a very healthy grain, not only because of the richness of its nutritional values, but also because it is a rare alkaline grain. It is rich in magnesium and iron, which is especially important for anemic people.
Preparation steps
- Cut perch fillets into pieces weighing 100 g, sprinkle a little with natur mediteran and drizzle with lemon juice.
- Cook the millet in salted water for about 20 minutes.
- Wash the chard and cut it into noodles.
- Add finely chopped garlic and chard to the heated olive oil. Saute for about 10 minutes, add the cooked millet and season with salt, pepper and Vegeta.
- Roll the pieces of perch in flour, eggs, crumbs and bake in deep fat until golden yellow.
Serving
Serve the fried fish with millet and top with a sauce of olive oil, chopped garlic and parsley.
Advice
In the same way you can prepare fillets of trout, catfish, grouper, etc. Instead of chard you can use spinach. If you do not have fresh spinach or chard you can prepare with frozen.
