Bravetina with potatoes
Mutton is a meat that is not consumed so often ... It is mostly used in areas where sheep breeding is developed, and there is less and less of it. It has a characteristic taste, and is most delicious when prepared as a stew.
Preparation steps
- Chop the red onion and place in a pot with olive oil and chopped bacon. Add the mutton pieces and lightly fry in oil. (due to its fat, which contains mutton, it is not necessary to add a lot of oil). Stir occasionally to fry evenly.
- Pour in the white wine, cover and simmer more. Add salt (and vegeta) and add water (about 1l). Let it boil gently. Add water if necessary. Add tomato concentrate. Let it cook for an hour or more as needed.
- Cut the potatoes into cubes and add to the lamb. Mash the garlic with the basil and add it as well. Let it cook. (In total, it took me more than two hours to cook).
Serving
You can also remove some of the lard fat. The lamb can be boiled before cooking, cooled, and then prepared into a stew (then it is less intense in taste).
