Bonne Femme potatoes
A simple side dish according to an old French recipe, there are a lot of variants, this one is from Rudolph with 24 Kitchen.
Preparation steps
- Peel a carrot and cut it diagonally into oblique slices. Wash the mushrooms and cut them in half. Cut the bacon into cubes. Peel and slice the onion into larger pieces. Peel and chop the garlic. Peel a squash, grate it and cook it in half. The best are completely young potatoes, but you can also use any other potato.
- Heat a frying pan and pour in very little olive oil. Fry the bacon in a pan for about 3 minutes. Add the potatoes and fry on high heat, stirring constantly, until slightly browned. Add onion and garlic. Add the champignons to the pan, cook for 2-3 minutes and add the carrots, stir and after a few minutes add the peas. Bake for about 3 minutes. Season with salt and pepper.
Serving
Serve with roasting, and can also be served as a main dish with lettuce.
