Preparation steps
- For the biscuit, you first need to knead the dough from the listed ingredients, then wrap it in stretch foil and put it in the fridge for two hours, to cool well and tighten.
- While the dough is resting in the fridge, prepare the filling: clean the apples, cut them into cubes, pour over the lemon juice and sprinkle with sugar, then simmer them in their juice for ten minutes. Leave to cool, then add cinnamon, vanilla and a little anise.
- Turn on the oven, preheat to 180 degrees C, and during that time prepare the biscuit for baking. It is easiest to work on baking paper. From the dough (which is on paper), roll out a circle with a diameter of about 34 cm. Prick the inside of the dough with a fork so that it doesn't grow too much, then coat it with apricot jam. Apply apples on the jam, and sprinkle them with walnuts and raisins. Coat the edge of the biscuit with whipped egg white, then bend that edge upwards (as in the picture). Now coat the outside of the biscuit with egg white and put it in the oven to bake.
- I baked the biscuit from the picture for about 45-50 minutes. Sprinkle powdered sugar only on the edges of the still warm biscuit, and in order for the apple filling to get shine, coat it with a spoon - two apricot jams, which is diluted with three spoons of hot water.
