Bibi's muffins
Bibi is not allowed wheat. Not even milk. Not even eggs, rye, rice, no matter what one thing. This is allowed. And not only can he, this is very, very tasty. Bibi is a baby so she doesn't know any better, but I don't and I know, and it's soooo nice for me too.
Preparation steps
- Mix the dry ingredients in one bowl and the wet ingredients in the other. Then mix in the third group and combine using a spoon.
- Preheat oven to 180, arrange mixture in muffin tins and bake for 13-14 minutes. Be sure to use paper baskets as they will still be quite sticky after baking.
- Note: if you use egg, or soy pudding or mixed banana or apple juice instead of flax as a substitute for egg, 25 ml of milk is enough. I used flax, so I put more liquid. The mixture at the end should be as crumbly as a thick oatmeal, but not too runny. Instead of tapioca starch you can use plain flour.
