Benedict cake (almonds and strawberries)
I found this delicious cake in a recipe book, and I dedicate it to our Holy Father Pope Benedict XVI, on the occasion of a visit to our country, where we will pray for all our families. Holy Father, pray for us !!!
Preparation steps
- For the dough, make the butter well with a mixer, gradually add the sugar and vanilla sugar until you get a cohesive mass. Then add egg yolk by egg yolk, then add flour mixed with baking powder and milk. Set aside, and make snow.
- For snow, beat the solid snow with the mixer on the highest speed and gradually add the sugar. The snow must be firm so that the trace of the knife remains visible.
- Place baking paper on a 26 cm diameter mold and spread half of the yellow dough and spread half of the snow on it. Sprinkle 40 g of almonds on the egg whites and place in the oven for about 20 minutes. So repeat once more with the rest of the dough so you get 2 crusts.
- For the strawberry cream, chop the strawberries finely. Mix the pudding powder with a little water. Boil the rest of the water in a pot. Add sugar, strawberries, bring to a boil and remove from the heat. Stir in the pudding powder and boil everything once more, stirring constantly, and allow to cool.
- Beat the sweet cream with the sugar, vanilla sugar and cream fix.
- Place one baked crust on a serving plate, coat with red strawberry cream, coat with whipped cream and place another baked crust on top.
Serving
The cake is very tasty, and apart from having to bake the crust 2 times, it is quite simple considering the final result.
