Baklava without crust
Recipe from mom's notebook with some modifications… delicious, juicy, quick cake ...
Preparation steps
- Turn the oven to 180 degrees.
- Separate the egg whites from the yolks and mix the egg whites with 3 tablespoons of sugar. In another bowl, mix the egg yolks with 3 tablespoons of sugar and when white, add to the egg whites. Add 3 tablespoons of flour and 3 tablespoons of semolina and grated lemon zest.
- Divide the mass into 2 parts. In the first part add 2 more tablespoons of semolina (top full), and in the second ground walnuts and chocolate.
- Put baking paper in a 35X25 cm mold and pour the brown mass. Sprinkle with chopped raisins and pour the yellow mass on it.
- Bake for 20-25 minutes at 180 degrees. Check with a toothpick.
- Cool the cake a bit and cut it into cubes or rectangles of the desired size.
- For the topping, boil the sugar and water. When it thickens, remove from the heat and add the vanilla sugar and lemon juice. Pour over the cake and cool well.
Serving
If anyone doesn't know. Beat the egg whites to froth and create a light snow then gradually add the sugar and beat until you get a solid snow that will shine.
