Baked tufahije

I ate tufahije for the first time in Sarajevo, in the hotel "Evropa", where the best tufahije in ex YU was eaten in the seventies of the last century. When I wanted to make them myself, I ran into a big problem because there was no recipe in the old cookbooks! And since there were no computers and the Internet then, I had to improvise. They looked like ... Later I tried various recipes, and by combining several of them I got the one I like the most ..

Preparation steps

  • Peel an apple and grate it (if desired, leave the top) and roll each in sugar. Place them on a baking sheet over baking paper.
  • Mix the walnuts and the rest of the sugar and fill the apples. Cover well with foil and bake at 200 ° C for about 30 minutes. Remove the foil and bake for another 5 minutes to give the apples and walnuts color. Remove the baked apples to a tray to cool.
  • Pour water into the pan, add sugar and lemon juice, then boil until the sugar is completely dissolved and the syrup thickens. Pour over the tufahije.
  • Before serving, decorate the tufa with whipped cream and pour over the caramel, which should be slightly warmed to dilute. I make caramel quickly according to a recipe from Aliki and it can't fail!
