Baked cottage cheese by Nigella Lawson
A real simple and light Mediterranean dish, delicious.
Preparation steps
- Beat the egg whites with a little salt, just make sure they are not as hard as for cakes, stop when they are frothy. Put the curd in a bowl, add the beaten egg whites and mix everything lightly, add a teaspoon of chopped thyme, grated lemon zest, a little salt and pepper. Stir. Preheat the oven to 180C. Pour the curd into a 20cm cake tin, which you previously coated with olive oil. Sprinkle it with the rest of thyme and olive oil. Bake in a preheated oven for about half an hour, so that the curd catches a nice color and bakes.
- Allow the baked curd to cool in the mold. Transfer the curd to a plate. Serve cottage cheese with roasted vegetables, salad. You can additionally drizzle it with a little more olive oil, sprinkle with sliced tomatoes and peppers / hot or sweet / and of course don't forget the bread.
