Avocado cake

I’m really crazy about avocados right now. And when I came across this wonderful recipe I had to try it right away. Love at first bite!

Preparation steps

  • Preheat the oven to 180 C and grease and flour an oblong cake tin (length 25 cm). Cut the avocado in half and remove the stone, then take out the meat with a spoon and mix well with lime juice with a stick mixer.
  • Whisk the butter with the sugar and vanilla sugar. Now mix each egg (4 pieces) separately into the mixture. Mix flour, baking powder and ground almonds. Gradually add this flour mixture, avocado mousse and milk to the dough and mix. Pour the dough into a mold and bake for about 60 minutes. (after 40 minutes, cover the cake with foil so that it does not darken too much).
  • For the glaze, mix all the ingredients and pour over the cooled cake, then sprinkle it with chopped pistachios.
