Ashura
We have all heard of Noah (according to Muslims Nuh a.s.) and his ship. Well, this story starts with him ... When Nuh a.s. (Noah) complained to God about the unbelievers God told him to make a great ark and place on it those who believed in him, and two of each animal species (male and female). When Noah a.s. it was done by God sent a flood on the unbelievers. However, as the ship sailed for a month, the food supply ran out. In order not to die of starvation, they collected everything they found on the boat in order to make some soup and thus save themselves. This dish they made is called Ashura (a dish made of fruits, nuts and cereals) and Muslims celebrate Ashura Day on the first month of the year according to the Islamic calendar (Muharram). Preparation steps
- Acidify wheat, chickpeas and beans in water the night before (all in separate bowls). The next day, cook the beans and chickpeas in separate bowls but do not overcook, keep in mind that they will be cooked with the other ingredients for another 1 hour. In another bowl, cook the wheat for 10 minutes and throw in the water, again for 10 minutes and throw in the water and then pour 1.5 liters of water and let it cook for 50 minutes.
- When the wheat softens, add the washed and drained beans and chickpeas. Cook everything over medium heat. Dried figs and apricots cut into small cubes and soak in boiled water for 10 minutes. So do raisins. Drain the water and add to the sieve.
- Stir 3 cloves into a quarter of an apple and cook with one cup of water for about 15 minutes. Pour the water into the sieve. Add milk and gradually the other ingredients. Cook, stirring occasionally, until the ingredients are soft (about an hour). Grate a little orange peel and cook in water, throw away that water because there is bitterness and add the peel to the sickle.
- When the beans, chickpeas are cooked check the sweetness, add more sugar as needed and then check the density as well. It should not be too thick because it will shrink later so that it is not hard. It should be more rare. Add boiled water as needed. Pour into desired bowls and garnish as desired.
