Algerian sweet pie ..
.. the "secret" of this Algerian pie is that it is prepared by hand without a mixer, everything is done with a kitchen whisk ... of course, if you have the time and nerves..you can also work with a mixer, the pie does not lose quality, it is juicy and very, very, delicious ..
Preparation steps
- Put the egg yolks in a large mixing bowl, add powdered sugar and stir well with a whisk. Add melted butter, zest and lemon juice to taste.
- Continue to stir for 15 minutes. Add semolina, flour in which you have mixed baking powder to the whipped mixture. Lightly pour in the sweet cream and ground walnuts.
- In another large bowl, whisk the egg whites into a stiff batter, with the addition of a little salt, or a few drops of lemon juice.
- Lightly beat the egg whites lightly with a kitchen spoon into the biscuit-mixture.
- Coat a small cake pan with butter, and dust with a mixture of semolina and flour. Sprinkle half of the prepared biscuit and add the ground almonds to the other half.
- Place the cake-pie in a moderately heated oven. While the pie is baking, prepare the sugar syrup for the topping; bring the crystal sugar and water to a boil, then add a stick of vanilla.
- Take the baked pie out of the oven and lightly "steam" it with boiling sugar syrup. Leave it in a bowl to cool well and "absorb" the syrup.
Serving
Cut the cooled pie into cubes, bars, etc. Decorate it with ground walnuts and almonds or sprinkle with coconut flour.
