Alcazar cubes

I have had the recipe for these cubes for more than 30 years and I only made them once. While leafing through the notebooks with recipes, I wanted to present this treat to you as well. Today, on a special occasion, the 29th year of marriage, we sweeten up and remember some beautiful moments of youth :) The years fly by, events change like on a movie tape, and memories are the ones that remain ... Preparation steps

  • For the crust, whisk the egg whites with the sugar into a solid snow. Add the other ingredients, mix everything nicely with a wire, not a mixer, and pour into a 20 x 30 cm baking tray lined with baking paper. Bake the crust in a preheated oven at 180 degrees until the dough separates from the edges of the baking tray. Remove the crust from the pan and allow to cool.
  • Filling: Mix 20 tablespoons of sugar and 20 tablespoons of water well, add cocoa and broken chocolate and sprinkle all together on medium heat to the density of thinner honey. Leave this part of the filling to cool while you steam 10 egg yolks with 10 tablespoons of sugar.
  • Whisk the egg yolks with the sugar and steam. Cool this part of the filling, then combine it with the chocolate filling, whisk everything well to combine and finally add the whipped butter. Place the whipped filling over the cooled crust and flatten it well.
  • Whisk 2 bags of whipped cream with carbonated mineral water, put over the filling and grate the chocolate on top.
  • * Roast the walnuts a little in a dry pan, cool and grind. The crust will be looser and the taste will be fuller.

Serving

Make the cake the day before to cool well.
